Today I received a question as to what Vital Wheat Gluten and Dough Enhancer are, and where to purchase them.
First, I will say, neither ingredient are necessary to make the bread recipe I posted. I like to use them because they help the bread have more of a fluffiness about it.
Vital Wheat Gluten, according to Bob's Red Mill, "Gluten, Vital Wheat is the natural protein found in wheat. It contains 75% protein. A small amount added to yeast bread recipes improves the texture and elasticity of the dough. This is often used by commercial bakeries to produce light textured breads, and can easily put the home bread baker on a par with the professionals."
Dough Enhancer, according to Break Beckers, "Dough Enhancer increases dough strength, improves natural flavor and creates fluffier baked goods. It works well in cakes, pizza dough, scones, etc. For white bread use 1-2 Tbsp of dough enhancer for 12 cups of flour. For whole wheat bread use 2-4 Tbsp of dough enhancer for 12 cups of flour."
You can purchase dough enhancer and wheat gluten at most health food stores and many grocery stores even carry them now. First look in the baking section and then in the health food section. You can also order online from The Bread Beckers or Amazon.
